I had dinner at a friend’s house this past week, and her daughter made Ground Beef Porcupines for us. I asked for the recipe, because I thought it would be a great recipe to freeze for nights when I don’t feel like cooking. I used ground turkey for my version and threw them in the Crock Pot on low all day so I didn’t have to heat up the house with the oven. I think I might try adding chopped green peppers next time, too.
The great thing about this recipe is that I didn’t really measure anything. I eyeballed it all the way, and they turned out great. So if all your kitchenware is packed up in boxes because you thought you were moving but you’re not after all, well…it’s all good. Trust me. c-:
Ingredients:
Modified from Ground Beef Porcupines
- 1 pound ground turkey
- 1/2 cup uncooked regular rice
- 1/2 cup water
- 1/2 cup chopped green pepper
- 1/3 cup chopped onion {I ended up using one small chopped onion, because I didn’t want to put the rest in the refrigerator.}
- 1 teaspoon salt
- 1/2 teaspoon celery salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1 15-oz. can crushed tomatoes {Or tomato sauce, etc.}
- 1 cup water
- 2 teaspoons Worchestershire sauce
Directions:
Mix ground turkey, rice, 1/2 cup water, green pepper, onion, and seasonings together. Form into meatballs.
Arrange meatballs in a single layer in a Crock Pot.
Stir together the crushed tomatoes, water and Worchestershire sauce. Pour over the meatballs.
Cook on low for 8 hours or until done.

Katie did my darling niece Rachael make these for you? I got a message from her that she was going to make them for a dinner party. (I wrote her cookbook). These are great because they are old fashioned, kind of a recipe that is not common anymore and yes, completely freezeable. You can make them in large quantities, freeze them individually and microwave in a pinch when needed. They do tend towards dryness so the sauce is very important. Good for you for sharing. I am going to be placing another order in Sept. shipped to Brenda and then she will ship them to me. So you can order one straight from Brenda! I hope you love it. I had a great time writing it. It helped this last deployment go so much faster.
