I took a bit of a hiatus from menu planning this semester, so I’m slowly easing back in. Although breaks are nice, it’s a great feeling to sit down at the table each night with a good meal–and to know that Bradley is going to sleep with a tummy full of healthy food. So here’s what I’m cooking up this week. If you need more ideas, check out some past menu plans.
BREAKFAST
Oatmeal with cinnamon, fruit, and milk
Egg white omelet with veggies, English muffin, and milk
Smoothie with skim milk, banana, peanut butter, and flax
LUNCH
Leftovers {I heart leftovers!}
Salads topped with roasted chicken

DINNER
Baked Tilapia with Lots of Spice
Crock Pot Taco Junk
Cashew Chicken Stir Fry {chicken, veggies, 2 bouillon cubes, water, rice, and cashews recipe from Awnya at Time4Felt}
Lime and Paprika Roast Chicken
Blue Cheese and Dried Cherry Meatloaf {made with ground turkey}
Chopped Pasta Salad
Leftovers/Dinner Out

I’m so excited you’re going to try my lime and paprika roast chicken! You can basically use any veggies you have available for the veggie part so use what you’ve got around! =) xoxo
