A Season of Cooking: Spinach {Link Up Your Recipe!}

This week A Season of Cooking is all about spinach! Now, I haven’t cooked a whole lot with spinach, but I get a smoothie on Sunday mornings as part of my Mamavation Mom nutritional plan. So I decided to make a green smoothie. I checked out several recipes. Some people put honey, some put juice, some put pears…I tried to make mine as Mamavation-friendly as possible, so here’s what I ended up with:

INGREDIENTS

  • 1 cup fresh spinach leaves
  • 1 cup skim milk
  • 1 cup fresh blueberries
  • 1 teaspoon flax
  • 2 Tablespoons peanut butter {Needed to get the protein, and I love pb!}

DIRECTIONS

Blend everything together in a blender, top with a few fresh blueberries, and enjoy!

I thought it was really good, and I’ll definitely be making it again next Sunday morn!

Here’s my favorite salad:
Start with a bag of spinach leaves. Add in halved strawberries and roughly chopped pecans. Top with low fat poppy seed dressing. It’s DELICIOUS :)
