This week, we are cooking up mandarin oranges! My aunt passed this recipe on to us for mandarin orange salad, and we make it for lots of special occasions. It’s fresh, easy to put together, and a nice change from the typical potlock dishes.
INGREDIENTS
Almonds:
¼ cup slivered almonds
2 Tablespoons sugar
Salad:
Romaine lettuce
Celery
Green onions
Mandarin oranges
Dressing:
¼ cup vegetable oil
2 Tablespoons sugar
2 Tablespoons vinegar
1 Tablespoon snipped parsley
½ teaspoon salt
Dash pepper
Dash red pepper sauce
DIRECTIONS
Almonds: Cook sugar and almonds over low heat, stir constantly.
Salad: Mix ingredients.
Dressing: Mix all together. Shake and chill.
This salad is best if you mix it all together right before eating.
