I took my nursing final today, and the first thing I did when I got back home was head straight to the kitchen to bake up some mint chocolate chip cookies! Well, that’s not true. The very first thing I did was snuggle on Bradley and tell him Mama only has one semester left of school! Woo hoo! I said, “Are you so proud of Mama?!” He said, “Yeah, Mama!!!!!” Gotta love the approval from the toddler. 
Then I whipped up my favorite chocolate chip cookies ever. They’re soft and chewy and everything I love about a cookie. But I wanted to make them a little more Christmasy. So I added some Andes mints, and that did the trick!
Not only were the cookies rockin’, but I got to wear my new apron from Flirty Aprons. I think they felt sorry for me because I said I didn’t have an apron. So they sent me the Original Scarlet Blossom one, and it is such good quality. I love the material, the pattern, the colors, everything. It’s so cute! My mom asked if it was $50, but they actually are only $29.95 or less! They have aprons for men and kiddos, too, so you can all get one! But stick around, because I’ll be giving one away at the end of this post! In the meantime, here’s my recipe for Mint Chocolate Chip Cookies, which I adapted from My Favorite Chocolate Chip Cookies Ever.
Ingredients:
1/2 stick unsalted butter, softened
6 tablespoons white sugar
6 tablespoons packed light brown sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract {Oh, c’mon! You know I used coconut. 
}
1 large egg
1 cup, plus 2 tablespoons flour {I used white whole-wheat, but you can use all-purpose.}
1/2 teaspoon baking soda
3/4 cup chocolate chunks or chips {Plus a few more to melt and drizzle on top of the finished cookies.}
1/4 cup Andes baking chips
1 cup walnuts
Directions:
Preheat the oven to 375 degrees.
In a medium bowl, using an electric mixer, beat the butter, sugars, salt, and vanilla until well combined. Beat in the egg.
In a small bowl, whisk together the flour and baking soda. Add the dry ingredients to the wet mixture and mix on low speed just until absorbed. Combine the chocolate chunks, Andes chips, and nuts into a small bowl and stir into the dough.
Shape the dough into 1 1/2-inch balls and drop them about 3 inches apart onto ungreased baking sheets. Bake for 10-12 minutes, or until edges are golden. Let sit for 5 minutes, then transfer to wire racks to cool completely. Make sure you don’t overbake, cause you want them nice and soft! Then you can drizzle with some melted chocolate chips to up the cute factor.
