If you’ve read Frugal Femina for any length of time, you’re probably a wee bit tired of hearing about how much I love peanut butter. And coconut. But nonetheless, here we are talking about my addiction it again. I put coconut in just about everything I can. But I’m a little bit of a food snob, and I don’t love the aftertaste of the coconut extracts you buy in most local grocery stores. It’s really a balance to keep my frugal and food-snob personalities from having a street brawl, y’all. So a few weeks ago, I put a call out to the Twitterverse, asking if anyone knew of a good place to get coconut oil, extracts, and the like. Just a few minutes later, someone from Tropical Traditions wrote back and said they have a Web site full of coconut products. Thanks, Twitterland!

So I took a look, and guess what I found? Coconut. And peanut butter. And, more importantly, coconut peanut butter. Organic, no less. My dreams have come true!

Sandra at Tropical Traditions sent me a jar to try out. I didn’t need to actually taste it to know that I might have to go to group therapy to discuss my new Coconut Peanut Butter Problem. But in the name of an honest review and all…I opened up the jar and took a bite. Or 2. Or more. Somehow I want to savor every bite and yet gobble up the whole jar all in one sitting. I love that it’s made of organic dried coconut and organic roasted Valencia peanuts. That’s it. Just ground together and put in a jar. Not too sweet. No big words I can’t pronounce. Just coconut and peanuts.

So now I am spoiled, and I don’t think I’ll be able to go back to regular peanut butter again. I guess I’ll have to work my addiction into our budget or figure out how to make homemade. My favorite recipe with coconut is Hello Dollies. They have a graham cracker/butter crust with layers of nuts, coconut, chocolate chips, and sweetened condensed milk.
We’re trying to incorporate more of the coconut oil into our diet because it’s so much healthier.

When I make macaroons, I use unsweetened coconut and a little sugar. They taste so much better and are much fluffier. I am dying to try this peanut butter! They should sell it at Whole Foods!

I like to mix equal parts of melted semi-sweet chocolate chips and virgin coconut oil and pour it over ice cream. The ice cream causes the sauce to harden, creating a “shell” type topping without all of the nasty ingredients!

I found your blog through my Tropical Traditions newsletter. I just ordered more coconut oil and some lip balm made from coconut oil (I love that it is all natural and the best moisturing lip balm I have used.) Like you, I love peanut butter too, and my next order, I will definitely order some. My favorite uses for coconut oil are I usually put in some (less than a tsp.) into my whey shake in the a.m., and take about a tsp or so just plain as well as give some to my dogs. It is very healthy for them and they love it. I am following you on twitter now, and subscribed to your newsletter and have bookmarked your blog which I find very interesting.

We like the Coconut Flour Honey Muffins: http://www.simplycoconut.com/Coco%20Flour%20Recipes.pdf

HONEY MUFFINS
This is a basic coconut flour muffin recipe you can use to make a variety of muffins.
3 eggs
2 tablespoons butter, melted
2 tablespoons coconut milk or whole milk
3 tablespoons honey
¼ teaspoon salt
¼ teaspoon vanilla
¼ cup sifted coconut flour
¼ teaspoon baking powder
Blend together eggs, butter, coconut milk, honey, salt,
and vanilla. Combine coconut flour with baking
powder and thoroughly mix into batter until there are
no lumps. Pour batter into muffin cups. Bake at 400
degrees F (205 C) for 15 minutes. Makes 6 muffins.

I, too, love coconut and p.b….together and separately. And throwing chocolate into mix isn’t bad, either. :) I have a new treat, “Icelandic Coconut Balls” that I found here: http://gudrun.typepad.com/my_weblog/2009/11/ccc-blog-hop-day-2.html . Very good. Next time I make them, I thought I’d add p.b. to them. I think they’ll be even better. :)

I also am signed up for the newsletter. I too am a p’nut butter lover. A cousin once sent a date/coconut candy from Palau. I’m going to make granola with p’nuts, coconut, raisins, cranberries, honey, sesame seeds, etc…holiday gifts!
