The recipe for Black Bean Burritos from Tracy at Mama’s Fixins is a keeper, if for no other reason than how easy they are to whip up. I felt like it only took 5 minutes, and dinner was on the table. That is going to come in handy next semester on l-o-n-g clinical days, for sure.
I added red peppers to the food processor when I pureed the beans, and I served them with lettuce, onions, cheese, and sour cream. Xon is not a big fan of meatless dishes, but he gave his stamp of approval on this one. You think there are only so many ways to fix a taco–beef, chicken, or maybe even fish if you’re really daring–but this was a tasty variation. It was light, it was easy for Bradley to eat, and the lime juice was a really nice touch. I mixed up a fruit salad of strawberries and peaches to go along with it, and we were good to go!
