
As Bradley and I say, “Wowee zowee!” I made Tracy’s Zucchini Bacon Quiche for dinner, and it definitely makes my list of my top 30 favorite recipes. It even made my dog drool–literally!
What I love about this recipe is that it is soooo easy to put together. I fried up half a package of bacon for my Lentil Salad one night (a recipe that probably makes it into my top 5, by the way), so I went ahead and cooked the rest of the package since I knew I would be making this quiche in the near future. When I was ready to put it all together, I just warmed up the bacon. Since it uses crescent rolls instead of a homemade crust, it saved even more time. (And I got the extra buttery crescent rolls, so it was particularly yummy.) I also had a bar of mozzarella cheese, so I just popped that into the food processor to shred. It only had to bake for about 25 minutes, so I felt like it was ready in no time at all.
This is another meal that is great for summer, because it’s not too heavy or greasy. Just a yummy way to use up some zucchini. In fact, I’m wishing I had a little more zucchini to use up.
