This week’s recipe was M-U-C-H better than last week’s. I made the Egg Casserole from my friend Cherie at Queen of Free. I expected it to be like a quiche. But when I took it out of the oven, I thought it looked like cornbread. (That may be because I needed to use up some bread crumbs, so I used those instead of toast.) When we tasted it, we decided it was a cross between a quiche and cornbread.
We used bacon–although maybe a little less than called for, because Bradley and I snuck a few bites in the process.
We also used a mixture of cheddar and Parmesan, since that’s what we had available. Xon liked that it didn’t taste too greasy or heavy, but it still had a lot of flavor. We served it with some fruit, and I think it would be an excellent meal for breakfast, lunch, or dinner.
