Buy one of each variety of bean and mix them together. This is often cheaper than buying those that are already mixed in packaging.
4 cups mixed beans
1 TB Kosher salt
1 tsp black pepper
Seasoning meat (ham, ham bone, fat back)
1/2 small onion, cut into thirds
12 cups water
1 TB beef base
Add seasoning meat to boiling water. Let boil for 5 minutes. Add all other ingredients. Bring to boil and then lower heat to allow soup to simmer. Cook several hours until beans are tender and soup just right.
